Black Angus beef flash-fried with bell pepper, courgette, onion and pineapple in a pepper sauce. Served with baguette or rice.
The Menews
Our menu revives classics that were quietly forgotten, and ingredients that are typical but not yet famous. We chose not to follow the recipes everyone already knows, in the hope that you will also go and eat at the street stalls that carry the whole soul of Vietnamese food.

A few of the plates, exactly as they leave the kitchen.

All Day Breakfast
Served from opening until the grill goes quiet.
Vietnam's answer to boeuf bourguignon, learned during the French years. Twelve-hour braised beef with carrot, potato and quail egg. With rice or baguette.
Sautéed beef, three fried eggs and beef wrapped in lolot leaf, with a vinaigrette salad and baguette.
Not saké. Sakê is a fruit, breadfruit in English, with a flavour somewhere near sweet potato, only better. We steam it, layer it with potato flour and the usual crepe ingredients, and serve it as a breakfast crepe.
- Salty Tooth: sake crepe with shredded bò kho, pickled shallot, crisp rolled char siu bacon, onion, mushroom and egg.
- Sweet Tooth: sake crepe with Vietnamese pandan kaya sauce, served with fruit and a hot Vietnamese kaya coffee. Gluten free.
Umammamia Town
The greatest invention in the history of seasoning. It arrived in Vietnam in the 19th century and quietly worked its way into every kitchen and every family. If you are a hard fan of that sacred powder that makes everything taste good, you have found it. If you are not, please skip this part.
Chicken curry with coconut milk, potato and carrot. With rice or baguette.
Vietnam's version of drunken noodles: flat wide mì Quảng, bean sprouts and garlic chives, thrown in a hot wok.
- Vegan beef
- Mushroom & fried tofu
Minced pork and wood-ear mushroom, sautéed spring onion, layered between sheets of bánh cuốn. Finished with garlic-chive oil, cucumber, crisp shallot, salad, pickled papaya and carrot, mint and dipping sauce.
Noodles
Rice vermicelli with salad, fresh herbs, coriander, pickled carrot and papaya, crisp shallot, satay chilli and cucumber. The Vietnom version uses cashew sauce instead of the traditional peanut-liver dressing.
- Grilled pork belly, beef in lolot leaf
- Vegan bún
Fresh turmeric vermicelli and garlic chives, lightly tossed in peanut oil with pickled onion.
- White pomfret, mixed salad, vinaigrette, star fruit, cucumber
Phở sắn sheet rolled around grilled pork belly, beef in lolot leaf, lettuce, purple cabbage, pickled carrot and papaya, coriander. Served with garlic-chilli fish sauce.
Fried spring rolls over a bed of phở sắn salad with minced pork, purple cabbage, herbs and crisp shallot. Phở sắn is a Quảng Nam speciality that has been quietly slipping out of memory.
Served with garlic chives, bean sprouts, crisp shallot, lettuce, pickled carrot and papaya, fresh herbs and cucumber, with garlic-chilli fish sauce.
- Crisp roast pork + spring roll
- Grilled pork + beef in lolot leaf
Mushroom, daikon and vegetable broth with cao lầu noodles (close to udon, close to bánh canh but less yielding), served with vegetables and tofu.
Bún bò Nam Bộ with sautéed beef, bean sprouts and herbs, served with fish sauce and pickled papaya.
One of Vietnam's best-known dishes, using bánh hỏi instead of vermicelli because it is less messy and takes up flavour better. Grilled pork with a charred edge, served with warm fish sauce.
A light, gently sour salmon-bone broth with crisp fried fish, fresh dill and fried fish cake. Hanoi's traditional version is cooked with river fish; here we use salmon.
A familiar bowl across the centre: rice vermicelli in a bone broth, deeper and more savoury than the northern style thanks to mắm ruốc, with satay chilli and pickles alongside.
Signature Mì Quảng
Mì Quảng is a cultural inheritance and the everyday bowl of Quảng Nam and Đà Nẵng. Loving the noodle well enough lets us take it somewhere new, a little playful, never off-centre.
Choose your topping, tossed with bean sprouts, lettuce, purple cabbage in vinaigrette, fresh herbs, rice cracker, crisp shallot and garlic-chilli fish sauce.
- Char siu, minced pork, prawn & quail egg
- Mushroom, fried tofu & vegetables
Heat: not spicy | mild | spicy
Mì Quảng rolled around your choice of filling, with cashew sauce in place of the traditional Đà Nẵng version made with liver and peanut.
- Grilled pork, lettuce, pickled papaya & carrot
- Mushroom, fried tofu & vegetables
Mì Quảng, fried noodles, char siu, bean sprouts, herbs, salad, traditional cao lầu sauce and onion pickled with bird's eye chilli. For anyone not yet used to the firmer bite of cao lầu noodles, these hold their seasoning better.
Phở is the soul of Vietnamese cooking; mì Quảng is the signature of the centre. Traditional mì Quảng never uses a soup broth (the noodle is too thick for it), so it comes with a small, intense measure of lèo. Here we treat the noodle so that both inheritances fit in one bowl. Served with rare beef, bean sprouts, culantro, Thai basil and crisp shallot.
Chicken broth with sesame, cashew, miso and Hội An soy, minced pork, mì Quảng, minced chicken, bean sprouts and sweet greens. No peanut, unlike the original. Nourishing without weighing you down.
Our neighbour Thailand's famous Pad Thai, reworked Vietnamese: deeper umami from mắm ruốc, tamarind and mì Quảng. On top, prawns in a thick tamarind sauce, shredded chicken, bean sprouts, garlic chives and egg. Ask for phở sắn noodles if you want a texture closer to the original.
Mì Quảng has something of fettuccine about it. Here it meets a classic Bolognese, reworked Vietnamese with fish sauce and Tây Bắc mắc khén pepper. Lighter and cleaner on the palate, and it still lands naturally against the world's most famous kitchen.
